Barefoot In The Kitchen: Low carb Taco’s

Well friends, as you may know, Clay and I have been on the High Fat / Low Carb Diet AKA No Joy In Life Diet!  This is extra difficult for me 1. Because I love to cook and 2. I love carbs!

Finding variety within the confines of can and cannot have, has been tricky and I’ve discovered there’s something else that I miss…crunchy!  Momma needs TACO’S!  I read that you could make carb free taco shells with provolone cheese slices so you guessed it, I was in!

Preheat oven to 350°. Line a cookie sheet with parchment paper. Spread provolone slices on paper without touching.  Bake for 12 mins.

Lay parchment paper or foil over the edges of a rimmed baking dish.  Remove golden cheese slices and drape over the edges of the baking dish and allow to cool. Fill with favorite filling and toppings.
